Before DH and I had Bella, we had Saturday (and Friday) nights free to explore all the new restaurants and the disposable income to indulge our quest. Now that our budget is tight, we’ve started hosting more dinners at our house in the classic pot luck style. We pick a theme and everyone is assigned a category.

We started going pot luck to save money, but have since recognized that with the right attitude, eating at home can be a lot more fun. No need to stand in line, tip the valet who moved your car 20 feet or pay $60 to a babysitter. Another pet peeve of mine is the not so subtle pressure from the waitstaff upon completion of the meal, that the table is valuable and needs to be flipped for the next hungry group.
Recently, we had some friends over for a Mexican feast. Yes, I say feast because as always we had way too much food. That is one huge advantage of cooking with a group of friends. You never go home hungry and everyone shares the leftovers to make cooking dinner for the week much more simple. Liz made awesome Slow Roasted Pork Enchiladas. We insisted that Theresa make her always requested Chicken Tortilla Soup and Buttermilk Cornbread. She also made a delicious rice dish with tomatoes, black beans, onions and corn. Yum… For dessert, I made a silky, rich Flan.

So, we had all evening to eat as we wanted. The guys broke open some beers and we all sat back to catch up on our week.

The flan takes a little time, but is always worth the effort as it is a great dessert to make in advance and keep in the fridge. I hope you like the soup too! Please let me know what you think
